In the character selection screen of Mario Kart Wii, the princesses have tiny biker versions of themselves hidden inside their bodies. This is due to the game loading both the dress and biker models at the same time for efficiency, and simply shrinking the currently unused one.
From what I can tell, it varies depend on the person. Usually the name change is part of them coming out as a “new” person and make their own identity, sometimes they adapt the name they had, but it all depends on how the person feels. At least, I think.
