Simmer slowwwly till fruit is very soft. I dont peel, as i love the color the skins give to the thickening juices. 🍑 Run thru food mill to remove skins, and a fine sieve to create a velvety texture. Add a sprig o'basil, cool. Slice 2+ peaches, toss w curd. Put in pastry of choice, bake@400 ±45min
