i did lockdown three in henry VIII mode. put on two stone. something had to change or i'd have died. breaking my shoulder was perhaps the metaphorical kick up the arse i needed. glad i've changed. glad i enjoyed all the excess first. don't like feeling i've missed out on anything.
yeah full of calcium. i need it for my shoulder. i like to get as many different seeds/nuts/berries/fruit into there as part of an 'eat the 🌈' philosophy. micro-nutrients. feed the biome. it becomes a habit. my wife asked me to stop cooking heavy french food and make healthy stuff fun. it's worked.
so delicious. i used to crave bacon and eggs but it's yoghurt, nuts, seeds and berries these days.

yes good bacon SO expensive these days. sausages pack a lot of punch for their price point. bacon from M&S cut as thin as parma ham. not sure of it's point there.

greedy daddy! but savoured every mouthful. we were out of marmalade so number one had dregs of damson & black pepper jam with wee splut of ketchup & wee spritz of sriracha. had a full pot of monmouth coffee too and now only 26 minutes until the mighty reds kick off against the ev. weekend bliss.

yeah but it's always nice winning early on a saturday. you can relax into the weekend. i don't want to countenance any other result.
it was a boarding school thing. i was a really picky eater until i was 12 but liked mixing HP with marmalade for sausage sandwiches. fruit does go very well with pork but this was, initially, about making the most of limited resource.
have two calabrian sausages in the oven now. going on a toasted bagel with some marmalade. i like the fruit punch with the pig.

this was a nice lunch: pork chop adobo with sweet corn fritters and a pickled red pepper salas rosso. a tex-mex vibe. not remotely authentic but who cares if it's delicious?
yes, be nice seems a good starting point. I can, of course, be cross but the older I get the less I want to go down that route. in a challenging world maybe it’s better to try and set a different tone? bit more inclusive.

gochujang with its fermented bean depth and heat the main takeaway. three times as much of that as sriracha. the zests of clementine and lemon added a delicious dimension. will let you know how it goes with our 15 year old when he returns from his sleepover. he’s the wing commander. a connoisseur.

the lacto brine works so well with chicken. I don’t want to deep fry all the time but this route doubles down on succulence and my boys are wing connoisseurs.
your posts about booze are one of the few things that still pique my interest about something I gave up 2 1/2 years ago. loved stumbling on a bargain like a random bottle of macallan or Japanese whisky that had loitered for years on a random shop shelf. literal treasure.

yeah I love fruit n veggies too think they’re about 80% of diet these days. so much happier for it too but miss my steaks and reverse seared Sunday roasts.

buttermilk/egg marinade then dipped in mix of plain flour, corn flour, bicarbonate of soba. then layered for a hot oven and dotted with butter.

had a friend home from school back in 1980. he lived in hong kong and had never seen snow. have a photo somewhere of his first snowball bursting over his shoulder. one of those life touchstone moments. enjoy, chum.

jono i'm very happy not leaving the house. seth managed by my best friend. went for dinner with him and his wife first at mangal one - delicious - then walked down to the venue. it's a 10 min cycle from my front door. a leisurely cycle though i do like to smash into that.
new Korean sauce this time. made with gochujang, honey, soy sauce, sriracha, garlic, ginger, zest and juice of a clementine and a lemon. roasted some nuts to layer with shallots and coriander for extra zing and crunch. really good. freezing a batch of them wings in their buttermilk brine.
sauce was so good.
took two years. don’t tend to relish it but when it’s mates and a really good dj it’s still good fun. they all cracked on as I cycled home 😇
