As far as I can tell, this might be the music only used in this particular version of the dub, presumably due to rights. It originally used Has Zimmer's theme from the movie Backdraft, lmao
Sydney and I have been watching the original Japanese Iron Chef (it's great), and the experience has really been heightened by the fact the theme music in the dub is legitimately good production music that sounds like a Final Fantasy boss theme
