To be clear: I packed and froze the little cups the day after I made the pico, so the flavors had time to meld together but it was still at peak freshness. So the thawed pico is delicious.
Last week, when I made pico de gallo, I put some of it in eight little 2 oz to-go cups and froze them, and now this week I'm thawing them in the microwave to have with my breakfast, and it has worked out spectacularly. No more wasted pico! And no more making a new batch every week!

This idea will end up polling like 60% in favor, 25% opposed, the rest undecided.
