Chicken stir fry with noodles bok choi and green beans
Bean & veggie salad. We love it so much it's also breakfast on the go! 4 cans of beans (we like lt kidney, dk kidney, cannalini & black beans); cut up a cuke or 2 and a bell pepper into chunks; add a can/jar of your favorite olives; cherry tomatoes are welcome. Mix in Ken's balsamic vinaigrette. 😄
Forgot to include an onion. Use your favorite. Switch it up week to week. Ok, now I need to go make this salad!

* Chicken pot pie (but I use black salsify instead of chicken) * Pizza or flammkuchen (I make enough dough (same for pie crust) to freeze in portions so I always have it handy and it takes only 10 min. to cook on a pizza stone) * Quiche * baked potatoes with baked cauliflower and/or broccoli topped
with parmesan and greek yoghurt-onion-chives dip * potato gratin * Brussel sprouts with gorgonzola sauce and basmati rice mostly stuff that you have handy (potato, pre made dough) and that an be thrown together and then left in oven without making more attention necessary

I make tofu (I am vegetarian) and veggies with a peanut sauce (usually me just adding peanut butter and soy sauce). I have fresh basil too. I also do stuffed poblanos with beans, corn, tomato or salsa, jalapenos, and lots of cilantro. I can only cook if it is easy 😀
Japanese cold tofu: Silken tofu topped with shoyu, toasted sesame oil, scallions, and bonito flakes, but topping options are endless

We have a few (mostly) weekly recipes. Sausage and spaghetti, adding zucchini quartered slices in the sauce. Pork chops with cinnamon apples. A breakfast scramble with all sorts of stuff (mostly leftover veggies).
I will give you my most goblin mode recipe: fried eggs on microwaved garlic bread Nothing fancy. I use garlic butter. Total degeneracy. It's surprisingly tasty.
Chopped cucumbers, tomatoes, red onion, HB egg (or chickpeas) and hummus served in a pita.
Gnocchi takes like 3 mins to boil, while I do a quick sauté in garlic olive oil of whatever complementary fresh veg I have on-hand (tomatoes, spinach, mushrooms, canned white beans are typical for me). Toss together, top w ample parm. Quick & tasty!

Sliced peppers and onions sautéed with browned Italian sausages, drizzled with balsamic vinegar and doused with oregano and pepper. Serve over polenta or mashed potatoes. A staple in our house: simple, cheap and delicious.
