Ehh, plenty of authentic places here. Genuinely it's just a me thing. I don't think I'd realized until now how much more I know about more far-flung places across the globe than I do about our neighbor directly to the south.

So, I speak Portuguese and I could name all of the states in Brazil, as well as its neighboring countries. And I'm half Canadian, so Canada is familiar across the board. But I'm so disappointed to find that I didn't even recognize a Mexican state and capital city. Gonna be studying maps tomorrow

Guadalajara is the capital of the state of Jalisco. Tapatio (or tapatia) is what they call someone from Guadalajara. Just avoid anything that seems remotely Tex-Mex, and you're probably eating a recipe that came up through Jalisco.
