Some time ago we went for breakfast at a chain restaurant and were given a loaf of wonder bread as a promotion. Not something we would ever normally buy. Left it on the counter and it stayed fresh for weeks. We poked it every Am looked for mould. Scientific marvel we thought. Never ate it.

Yes and no, modern white Wonderbread is modern but white bread really took hold for the upper classes in the 18th and 19th century due to (reasonable) panics around adulterated flour. It was easy to see additives like pebbles, bones and sawdust which were easy to hide in wheat breads of the time.

Actually, the modern loaf is a little older than you're thinking. It was actually a pretty controversial issue in industrializing England. "White" flour lasts longer and thus poor workers were more likely to buy that bread, despite efforts to push them into buying whole grain bread.

It’s funny because a nice white sandwich loaf is about the easiest bread to make at home, if my childhood experience of my parents buying a bread machine is any guide. It was almost set and forget and made a pretty decent loaf.
