I thought the point of the engagement ring was that it's kind of a security deposit for when the marriage goes south, so you can pawn it off and pay rent for three months.

To the extent that it had a purpose beyond diamond company marketing, which mostly created the idea, I think it was more as a costly promise of loyalty. A bit like going through hazing, it's proof that you are willing to suffer for this relationship, by expending a sizeable resource chunk.
