To stuff the mushrooms I fried up the stalks, added (a bit too much) bread crumbs, and some feta pate Froze the filling for 10 minutes, stuffed, fresh Parm on top, baked at 350 for 20 minutes, then broiled for 2. Little dry due to breadcrumbs but still hit the spot. Ah well, maybe I'll measure.

Probably used a quarter of the feta pate batch. The rest is reserved for snacking and toasted ham sandwiches. Good thing I'm married and WFH
