and you can make homemade tomato paste, they can't stop you
It's at worst a waste of fresh tomatoes, but that's also just a matter of how many tomatoes you have at hand
If you have a tomato mill you can absolutely make Sunday sauce with garden tomatoes. It was my favorite kitchen helper chore as a kid. I got to wear an old tee shirt as a smock.
no food mill unfortunately but i'm going to blanche them and puree some of the smaller ones to turn into tomato paste
I have never used my mill for anything other tomatoes. 🍅 It’s too late here to start sauce, but tomorrow is Meatball Monday so it looks like I’ve got to go to les vergers in the morning.

My garden produces three types of tomatoes (cherry, beefsteak, roma). I have herbs on my porch, and my neighbors grow corn, onions, squash, and cucumbers. My sauce game is on point (I did a batch last week with hot sausages in the pot). There is a lot I do and freeze for the winter.
Some of what my neighbors shared with me & part of my garden. The onions are small (almost like a shallot) but flavorful. I pickle them in jalapeño brine with carrots & the cucumbers & green pepper strips. Delicious. The corn is Silver Queen. Sweet & so good grilled. I am so blessed down here.
The vendors should be enlisting their help setting up, breaking down, and hauling trash.
