Every chile season I get 6 or 7 pounds of Hatch green chiles, dice them up and put them in the freezer. A handful of that tossed into boxed mac and cheese or cheap ramen tastes amazing and really helps add nutrition on those days I can't be bothered to meal properly.
Three days ago I froze 18 two serving size Pyrexes with spicy mac & cheese with black beans corn and roasted veggies.

I have two gallons of red roasted pepper hummus in a giant bowl in my fridge that I can't freeze yet, because the cumin seed was old enough to have lost some flavor, so even using all I had left wasn't enough. A fresh pack will arrive tomorrow.
I wanted to use the last of my old chickpeas before pouring the new 25 pound bag into the bucket, so I had a little too much for the biggest pot. It foamed over so badly that now I get to dismantle the stove to scrub the innards.
