I was and I didn’t feel like cooking but the market was still open so I went. I really wanted a pork chop but my casera who cuts them how I ask her to wasn’t there so I got the tenderloin instead.
A lot of butchers cut pork chops too thick for my taste. I want bone-in, none of this stuff with no bones. Tenderloin is always yummy though!
She will cut it to the thickness I want and trim it how I like and it’s such a time saver. You can’t go too wrong with a tenderloin and it’s really a perfect match with the sweet potato. The salad is just okay. I make a lot of mesclun with something and the carmenere balsamic is my usual.
We are on a salt and olive oil kick with a squeeze of lemon because my lemons are finally ripening.
