27. Lived in NC for 19 years, after moving down from CT. But half this stuff I had had long before I moved south. Fun story about "chess pie" from a coworker who made really good ones for our office parties. He was pretty sure it comes from "just pie," in response to "what kind of pie is this?"
I’ve heard it explained as pecan pie without the pecans.
My coworker used to bring in chocolate chess pie. It was almost like a brownie. But your description makes sense together with his explanation - without the pecans, it's not pecan pie. It's just...pie.

It is exactly what it sounds like fat off a pigs back. Generally used in a pot of beans or greens. It can also be deep fried like pork skins/rinds.
