Wut? yes ofc, the Viennese version is veal, but you can use pork, chicken, mutton, beef, or even turkey. Jägerschnitzel ('hunter's schnitzel') has mushroom sauce. Rahmschnitzel with cream sauce Zigeunerschnitzel adds tomato, bell peppers, and onion slices.

Wiener in USian English is short for wienerwurst, as in Vienna style sausage. Frankfurter as in Frankfurt style sausage. The German immigrants brought "dachshund sausages", popularised at the 1893 Chicago Colombian Exposition,
and by St. Louis bar owner Chris Von de Ahe who also owned the St. Louis Browns baseball team. "They're red hot! Get your dachshund sausages while they're red hot!" became hot dogs. Use of wiener for phallic objects just came from the shape.
It’s like the French with champagne, you can schnitzel what you want but the Austrians will argue with you. Schnitzel is katsu in Lederhosen.
I was told it was jager schnitzel but there was no licorice flavor at all. I think it was pork.
