I have been a lifelong devotee to cooking on gas with cast-iron skillets. Hate electric; not responsive enough. Then in France our rental had induction, and I ended up loving it. Tried to get one in my NYC apt, but the electricity isn't strong enough in our building.

There are ones with built-in batteries now, that plug into a normal 120 V 15 A outlet!

Something seldom mentioned re. induction- We have 2 dogs. One is fine when the induction is on. The other one starts shaking really bad. I'm not sure if it's the particular brand/model we have, or if he would shake with any induction unit.

It’s the one you have. Probably even the specific unit matters as much as the brand. The ultrasonic sound output is probably something that is completely uncontrolled (but should be, for anyone with young dogs!) As the dog gets older it’ll probably get harder for him to hear it.

Actually it's the younger of two dogs that doesn't seem to be affected by it. I keep meaning to see if it's only when there's a pan on it. I don't hear anything until there's a pan involved.

I switched at home when our propane company started wanting $170/yr for the tank (for $30/yr worth of propane). The oven was already electric, so the switch was easy. Better in every way other than needing a couple new pans.

We got a single “burner” version about six nine months ago. Total game changer for our family of four. Made another perfect pot of quinoa just this morning. No overcooking, boiling over, or undercooking. My hollandaise sauce is also perfect every time I make it. Wish the entire cooktop was this!
