I used to get chuck roast at Food Lion in Virginia on sale for $2.99/lb. The last time I saw it on sale recently, I believe it was $5.49.

Yup, I wasn't sure if it was $5.49 or $5.99 and gave the old Lion the benefit of the doubt. But $5.99/lb. for tough meat sent me straight to the pasta aisle.
My wife has a great recipe for it from her mother but still cooks it too long, 35 yrs she is so stubborn 😅
It's all in the marbling. The last one I made was absolutely delicious. But you're right. If you cook it too long, it's dry and stringy once you suck all the cooking juice and gravy out of each bite. It's one of those recipes I'm eternally trying to perfect.
