Scale of farming… that’s why. We don’t farm turkeys for their eggs… we do chickens. I’ve made Turkey egg Omlets and whatnot… they’re fine. I’ve also used other eggs. They each have their own challenges. Chicken eggs have a good blend of fat, protein, etc., for cooking properly in dishes.
