I have a modern Bonneville and decades ago I had a Norton Commando that rode similarly (Triumph copied Norton). A Bonneville Bobber isn't a Bonneville, this one is.

Mine is a Bonneville, air-cooled with an oil cooler. The water cooled versions are Speed Twins. For some reason Triumph call the bobber a Bonneville although it has a Speed Twin engine. I live in the mountains, my Bonnie loves hilly winding roads, that picture is after a hard run to Crookwell.

The Bonneville T120 moved to a water cooled engine in 2015, the Bonneville Bobber came out in 2016, the Speed Twin came out in 2018. So no, the Bonneville Bobber does not have a Speed Twin engine.
