It could do coal mining, but that's not technologically "sexy". "AI" or, more accurately, computer vision algorithms are an excellent tool for identifying minerals, and directing where to dig. Machines could work without the need for ventilation of suffocating gases.
By sexy do you mean profitable ? If your hypothesis is correct human labour is so cheep that no one bothers to put computer vision on underground digging machines anywhere.

Changing linens is a much more complex task by comparison. Even the most agile humanoid bot today would struggle with it. The people should absolutely be respected for doing these jobs, but also we should look for ways to put coal (and other miners) out of work for the sake of their lives.
