Somehow, humans survived on it for millennia. So did all of the calves. Pasteurization is and always has been a way for factory farms to clean up dirty milk. I grew up in a dairy farm and never heard of food poisoning until I was old enough to read the newspapers.

Right. Microbes took out lots of us, especially the very young and the childbearing. There is some genetic (therefore evolutionary) basis for disease survival. But not always. Smallpox killed 30% of those stricken, including young and otherwise healthy.
