I was always amazed at how much story they crammed into a single episode. For a long time I had thought it was a two parter.

That's a great point! It starts of as one story but quickly moves into another story, before a final twist. Stargate Atlantis did that so very well. Each episode had about 3 problems each episode which our heroes overcame.
