So I cooked up pasta Zozzona & I can’t for the life of me understand why: a) I never heard of it before Monday b) Why the various online recipes have single figure appreciations. A marriage of Amatricana & Carbonara. Possibly the first Italian dish I’ve cooked without @nigella.bsky.social’s help.

It's the Roman pasta equivalent of a Pot Noodle....it's filthy but it's gorgeous
Will have to give it a go, looks delicious but will have to use vegan meat substitute. Vowed never to eat pork again some years ago.
