They're also hard to staff. I worked at one a decade ago when I first moved to NYC and it was really hard to find coverage even then for a place that was open 7am-2am.
Also despite it being a thing in NYC, for the most part the personnel costs associated with selling coffee never comes out ahead of the revenue generated.
I have seen them but I believe the bigger issue is that being a barista and bartending are absolutely not the same skill set so most of the time you have to train different staff for different hours of the day.
I think it's more of a vibe issue. You could definitely have different evening and morning staff. Starbucks attempted beer at some locations and it flopped so I don't think it's a licensing problem. I feel like nyc and European cafe/bars are more like restaurants.
Pretty common for NYC places to be open from like 7:00am-midnight though, so it’s definitely possible if there’s a will.
There def are some. But not nearly as prevalent as like say, San Diego
Been in this industry and have friends that have places and it’s a bit of a vibes thing too.. the laptop crowd tends to dominate and kill the mood for people that want a fun happy hour so it’s hard to get great sustaining traffic
there are a few cafés that sell alcohol in des moines here but I would never call them bars
