Ground chuck is my preferred for dirty rice mix. Instead of draining the grease and adding vegetable oil I just skip those steps and use the minimal amount of fat from the beef. Not only is this a simple, easy meal, but if you do it right outside of the city it's well under 20$ to feed 2-3 people.
