Iβve had chicken that way, itβs yummy! I made the cod the first time by putting a thin layer of light mayo and then panko on top. I buy the plain & season them myself so thereβs no extra salt.
Hubby wonβt eat the eggplant but yes, heβs had light mayo. I use a tablespoon in his tuna fish. Heβs never been a big mayo guy so he doesnβt mind.
How thin? Iβll try it but Iβve about given up on eggplant.

Do you salt and sweat it to take away the gross before you cook it?
I peel, slice and just a sprinkle of salt on each side before I dip. I prefer to use graffiti eggplant but sometimes just regular purple ones (like today)
I cut mine generously.

Mine eats his raw. Well except potatoes and corn on the cob π
Those are starches in this house. He has to eat his veggies to get the starches. Iβm a tough ole bird.π€£ Itβs hard doing low carb.
He eats the veggies, just raw! Salad every day - with carrots and cabbage and whatever else I can add in. He loves tomatoes (ok thatβs a fruitβ¦)
