As far as explicitly anti-AI platforms go, I'm familiar with Cara and Pillowfort. Cara is a dedicated space for artists and personally, while I've found that the age demographics are quite mixed, the most vocal users tend to be younger. Pillowfort is like Tumblr but more community-focused.

I stopped using Twitter pretty much as soon as I got my invite code here (yes, I'm that old.) I deleted my Twitter shortly after the election results came in. My Facebook was basically abandoned by me eons ago and I've been trying to find a good reason to get rid of it (it's gone now.)
