This is a study of association not causation. Such studies have value, but when there is no particular reason to think nitrates or other hotdog related substances cause diabetes, it seems far more like eating a daily hotdog is correlated with other behavior that does increase risk.

The paper does not say there's no safe amount. The ARTICLE does not say there's no safe amount. One expert is quoted as saying that. She wrote one of the summarized studies. Her study found that consuming 2 slices of ham a day is associated with a 15% higher risk. All of this is *habitual*
consumption. It's probably not a good idea to eat processed meats every day. And every one of these study designers admit that it is an association. Is the hot dog consumption the problem, or is it that people who eat a lot of hot dogs, which are cheap, have *other* issues? I wouldn't eat a hot
