When I crush up graham crackers I break them into rectangles, put them in a gallon Ziploc bag, grab a rolling pin, give it a couple solid whacks then start rolling it out until I get the texture I'm looking for. Squeezing out most of the air before sealing the bag and rolling helps a lot.
