soaking is the superior method. i don't think that the canned bean factories soak their beans long enough. there's just something wrong with the flavor of canned beans. but a proper 8-12 hour soak (you can do longer if you salt the water) is the best.

Why would you even want to? Middle East did an updated recipe, it's exactly the same but with olive oil and more tahini. You can mess with the ratios but the technique itself cannot be improved on
