soaking is the superior method. i don't think that the canned bean factories soak their beans long enough. there's just something wrong with the flavor of canned beans. but a proper 8-12 hour soak (you can do longer if you salt the water) is the best.
It's fine in a pinch but if I'm making hummus I have to boil them anyways to break them down
pressure cookers will cut your boiling time way down btw

Why would you even want to? Middle East did an updated recipe, it's exactly the same but with olive oil and more tahini. You can mess with the ratios but the technique itself cannot be improved on
I mean I would want to to save time lol.
