I saw a piece by Professor Berry about reframing processed foods in to harm levels, because Nova doesn't score health risk and outcomes. It's useful to do this particularly as there can be a significant price variation between a healthier and a less healthy processed food, when money is tight.
I understand that, and agree there's a huge variation between the worst and least harmful UPFs. I think a lot of consumption is down to convenience or even downright laziness. I can produce a lot of the ready meals cheaper than the mass produced ones, so the argument about cost is at best marginal.

You might be surprised how many people are poorly skilled in the kitchen! Yes there's some laziness and there's some convenience thrown in. Speaking as someone who is adventurous with food and then became vegan over night, I know I had the drive and skills to change, many don't though.
That's why I make a point of getting the grandkids involved in food prep and cooking. My ex daughter in law doesn't teach them anything and relies a lot on ready meals I got the 9 y/o making beef burgers the other day for the BBQ, explained why they're called patties as she was forming them.
Being engaged with food is good. Even better if they know where the food comes from as well as how it's made. Thankfully, I wasn't driven to eat one thing or another and we were raised to be open-minded about food, admittedly Anglicised versions though. Texture is massive driver of avoidance! 🍄
Yes, being engaged is the way I have of getting them to eat a wider range of food. We have them here every weekend, and they're so fussy because of the limited range of foods they eat at home. They love making bread with me, and being involved in food prep means they're more likely to eat it.
Making bread is a good one, how the gluten develops, the stickiness and all that business. I was this years old (minus one or two) when I learnt about slap and fold method for high hydration doughs!
Oh and I don't think I've seen a wavy baking tray rack like that!
