It’s used as a topping on noodles, dumplings, rice, eggs, even pizza or avocado toast. The most famous brand is Lao Gan Ma (老干妈), but there are many artisanal versions now (Fly By Jing, Momofuku, homemade recipes, etc.). (4/4)
