I can keep kitchen knives sharp (former sous chef here) but the idea of working with a blade that size gives me a bit of pause. I bet I could learn easily, though. Thanks for the words of wisdom!

Yeah if you've worked in a kitchen, you'll have no trouble at all. This is just a very long, high-carbon blade. it comes pretty much shaving-sharp, some people put custom bevels on them just like knives but you don't really have to. And just keep it dry / oiled a bit to prevent rust.
