I bake mine in the oven on the back of a sheet pan, I noticed if I don't flour the pan or the bread after rolling out enough, it won't puff. Like if 1 little spot sticks, it won't puff. I'd like to bake on the stovetop though. I hate heating up the oven so hot to 550.

I have a lodge “pizza pan” that I use for things like tortillas and pita etc etc.

Try the flour thing on the pitas though, so it can easily slide around.
