Almost the entire color wheel if you count the green ones on the vine! When I have too many tomatoes, I will blanch them to remove the skin easily and then freeze them for winter soup, stews, sauces, and chilis.

My uneaten garden grows go directly into freezer bags. No blanching or removing skin. They work great, as you say, in the winter meals.
