Layman’s question: Would an over abundance of anti-neutrinos be able to “balance” out the “missing” positrons? (I assume we would have noticed if a similar amount of positrons compared to electrons existed)

It could, absolutely. But it can't balance out the missing anti-protons, since anti-neutrinos are not baryons.
