My spouse's recipe is a bit more...intense... Soak dried chiles (ancho, guajillo, chipotles if you can) in dark beer to soften. Puree, and strain out solids. Roast fresh chiles (ancho, guajillo, and whatever spice level chile you like); cool, remove skins (rub w/paper towel while hot); blend.
Don't strain fresh puree. Brown 1-2 lb stew meat, add to crockpot. Cook 2-3 lb ground beef and 2 chopped onions. Add some garlic, and half a tube tomato paste. Cook a minute. Add fresh chile puree. Cook a minute. Add to crockpot. In same pan, cook dried chile puree to reduce. Add to crockpot.
Add 4 cans black beans (drain/rinse), and 4 cans fire roasted diced tomatoes (puree some if you want). Puree 1 can chipotle peppers in adobo with 4-5 cups Better than Bouillon beef stock (water). Add to pot. Add ground cumin, ancho chile powder, guajillo chile powder, and Mexican oregano.
Cover and cook 8 hours on low. Check at 6 hour mark for spice/salt level (since those are personal opinion). About ninety minutes before done, add 6 TBLS polenta (coarse ground grits) to help thicken. When serving, top w/lime juice, cumin crema, and cilantro. Serve w/ fried savory polenta cakes.

I do mine old school in a deep electric frying pan. Sauteeing the hamburger in clamato juice before adding everything else takes it to another level! 👍 Love chili and all of its personal variations! 😋😋
