We are always warned not to touch caterpillars like these by our parents due to how itchy those hairs can be in the skin.

Don't know where you live but that could be a salt marsh caterpillar. I wouldn't ever handle something that looked like that without being confident of the ID. Things with hairs like that are often poisonous.
