I haaated bitter greens and recall at 14 being served them at a restaurant and thinking oh shit, I’m starving and I can’t eat that. Then an adult at the table asked for malt vinegar which he put on them. Intrigued at how bitter + bitter would taste (remember I was very hungry) 2/

So I tried it and it tasted amazing. Similar thing happened with Brussels sprouts and learning roasted they tasted hella better than boiled. Anyway, this is to say I started haunting the salad bar and ordering 3-4 veg sides in restaurants very early as a teen. Wow this edible is weird. 🤷🏻‍♂️

Never tried malt vinegar on veggies. But then again I lime bitter greens.

I only know of its use on collards but don’t let that stop you from trying it on other veg
