That's Florida for you. And that you hear not a word from Iger at Disney or Roberts at Comcast or any of the tourism heads entirely resting on these tourists showing up and spending speaks so loudly of these individuals and where we stand today as a country.
The signs are impeding foot traffic. The sign is telling you not to do what it is doing. Someone should take it or at least move it off the sidewalk.
Pick another sidewalk crossing and make it a rainbow crossing. With chalk (what are the vandalism laws in Florida?). Keep doing this with random crossings until it just gets too much for Desantis to deal with. Just how many state troopers can be detailed to watch over all the crosswalks in Orlando?
This would be best a block or two away, right where the state troopers aren't watching. And this is not an invitation to violate the law. But notice that the justification for the painting over was "politics", not safety, so there may be no law in FL against painting/chalking crosswalks.

To be fair, someone in my neighborhood writes religious phrases in chalk on our sidewalks. That kinda grates on my nerves.
