An admin at my school, that I thought was a great teacher and quite intelligent, had interrogated me about eating a can of soup every day at work. How does it stay fresh? It must be loaded with preservatives! (No) Or sodium! (No, it’s canned!) so it’s in a container? (It’s canned!)

She had no concept of canning. None. She thought it was like when she puts fruit in a container at home. She said it still could go bad. I was actually sad. This woman had covid 5 times in the first couple of years. She either lost it or was never all there. And she was getting her PhD. 😔

I buy my toddler pouches of apple sauce, which are an easy on the go snack. I mentioned it to a nurse, who said she always wondered what they put in those to stop them going bad. (the answer, of course, is that they are under vacuum, just like canned food)
