Maybe a vinegar based mop. I add sugar, equal parts, with some chili powder(I use arbol and guajillos) along with a little onion powder for pork ribs. Mop with half bbq sauce and half vinegar.

One of the weird things I like is I take a can of spam and cut it into up so it’s like a bunch of little finger sized portions without going all the way through so it fans open a little. Leave it on until it gets a nice mahogany smoke color and serve hot.
