Relax. I eat tofu. I mean the texture in my mouth. Some people feel the same way about mushrooms.
I freeze it as soon as I get it home. Thaw it and proceed with pressing and marinate or season however you prefer. Freezing it improves the texture, imo. Hope this helps.
This is the way. Big tofu needs a PSA.
