I'd assume it's because Stannis is likely seen as too old. Maybe they want a young king? Or it's religion-focused, since Stannis was pledged to the Lord of Light versus the common pantheon of god they have. Yeah it was based on force in the short term but Renly could likely make the argument---

I would agree with the religion thing as a mark against Stannis if the show canon didn't make it clear that the Faith is basically toothless and Westerosi society doesn't really give a shit (see Cersei firebombing Baelor).
The real reason is that he likes burning people on the advice of a foreign sorceress. That's why a hypothetical Stannis who won at the Blackwater would probably end up like Rhaenyra.
It's not necessarily a death sentence for his regime, mind, but I think it poses a challenge that he's not necessarily prepared to face, especially considering the crises he has to manage if he did win.
