Also, sidenote - the dog food meat industry is literally the human food meat industry. They are not different things, and stopping dogs from eating meat is not going to reduce the amount of meat being slaughtered.

If we weren't putting the chicken skin and bone marrow into dog food, we would be turning it into slurry to feed back to chickens or whatever. It's all just composting of what humans reject, right?

Kind of, yeah. But more literally - the dog food industry is quite literally the same abattoirs as the human food industry. Actually, especially in the UK, the food standards are often higher than in human food. So it's not necessarily what is rejected, more than it is the whole of the animal.
