If you're smart like me, save your jar of pickle juice after you finish the pickles off. It makes a flavorful quick and easy brine for all your white meat dishes. If you're dumb like me, proceed to spend all the time you saved making scalloped potatoes at midnight 🙄🍽️

Two brined pork chops for lunch tomorrow and two simple salt&pepper chops for fried rice for dinner as well tomorrow. Two seared brined chops on the right, two seared non-brined chops on the left. A simple cream sauce with butter, local onion, fresh thyme, and a roux. Three lbs of skinned and mandolined Yukon gold taters.

we call that 'pickled chicken' here, but I haven't tried pork those potatoes came out looking great

Great idea! I've always saved pickle juice to stop late night leg cramps & it works. I use that rarely and good to know I can use it in other ways so it won't go to waste💙🦋

Ever since I was laid off last week, I've been totally channeling my inner Bob during his InsomniBob episode. He finally gets to deep dive into his love of cooking and I'm here for it. I don't mind staying up late trying new recipes and spending some alone time in the kitchen. It's church.
