That's an open system, where outdoor air containing God-only-knows is flowing over the cool bits & running out. This would be a closed system where the source is steam, hot enough to sterilize, flowing through chilled tubes to condense. It's how we already distill water, just the heat is coming...

...from computer servers instead of burning fuel or electric heaters. This is how we get pure, uncontaminated water, no minerals or chlorine, for chemistry or certain tech applications. It doesn't taste very good though.
