Actually have had some great vegan mozzarella sticks! Mostly restaurants that made their own. I personally despise then taste and smell of cheese, so naturally already like the flavor of vegan cheese. Tapioca starch is a cheat for stretchy vegan cheese
I used to cook and experiment more, so I would talk a lot to people about it. Vegans honestly take food science to a whole new level haha
