Out in California, Sikh immigrants have really stepped up in the trucking industry. They have cool, colorful designs on their trucks and you can now find delicious chai and snacks at extremely remote truck stops in the desert!

I think I stumbled upon one of these places in Oklahoma City back in 2016. I was there because my dad was in the hospital and I was looking for Indian food in Yelp. I showed up there and it was a gas station that sold Indian food. But it was only cash/independently of everything else.

There are these pockets all over the place. In NW Arkansas where I grew up there is a large Vietnamese population. I went to school with a guy who told me that after the Vietnam War a bunch of folks who were air lifted out settled there.

There’s a string of truck stops on 10 in east Texas that all mention that their food counters are halal, and it brings a huge smile to my eye every time.
