Literally just look for cheap stuff and start trying it. There’s such a wide range of options and price points that there’s no real specific advice. If you’re willing to pay up a bit more to experiment that’s fine too. Sardines and mackerel are the most neutral and adaptable to sauce they’re in.

I love the Nuri spiced sardines you can get on Amazon as a step up from grocery-store stuff without being as insanely pretentious / expensive as a lot of the new-wave tins.
